Rich but soft red from an ancient terroir that has been producing wine since the middle ages. Made with indigenous grapes Tannat and Pinenc plus some Cabernet Sauvignon. This is a modern clean wine with great authenticity and character. Matches meat dishes but also gently spicy dishes.

Producteurs Plaimont is a co-operative in the village of Saint-Mont in the Adour Valley of southwest France. Vineyards in the region date back to the Romans, through to the Middle Ages when monks were making wines for pilgrims on the route of Santiago de Compostela.
In the heart of the unspoilt countryside of South-West France, the Saint Mont Appellation d’Origine Controlée covers the slopes of the Pyrenean foothills to the west of the Gers départment. Local grape varieties can fully express their authenticity and generosity on this exceptional terroir.
The monastery which dominates the village of Saint Mont testifies to the fact that Benedictine monks were already cultivating vines in this area as early as the 11th century.
The climate, with its cool damp spring weather and hot, dry Indian summers is conducive to local grape varieties reaching full maturity.

In modern times the wine-producing heritage of this area has been reinvigorated under the leadership of the visionary (and beret- wearing!) Andre Dubosc. Plaimont was founded in 1979 when he brought together a group of like-minded winegrowers, with a quality-focused approach. Plaimont is now rated in the Top 10 Wineries in France.
Innovation together with respect for tradition has seen the cooperative invest in modern winemaking techniques, lead a revival of ancient regional varieties, assist growers to improve viticultural practices, and embrace sustainable and chemical free systems. Improved grape quality has yielded vivacious wines showcasing the delicious flavours of grapes grown in the region.

Full bodied and well structured, this wine has an aromatic complexity replete with black fruits (blackberry, blackcurrant) and liquorice underscored by subtle toasted notes. After 5 years aging ofsome dark chocolate notes are coming through.

Match with prosciutto or roasted or barbecued meats. Will also hold up to some gently spicy foods.
This cuvee is produced from a careful selection of the three best terroirs of the appellation: clay-limestone, variegated clay and fawn-coloured sand. The natural sweetness of the fawn-coloured sand combined with the richness of the variegated clay (covered to varying degrees with rolled pebbles) and the minerality of the clay-limestone subsoil gives this blend the unique complexity of the Grands Vins de St Mont.
Grape varieties: 70 % Tannat, 15% Cabernet Sauvignon, 15% Pinenc (both Tannat and Pinnec are indigenous to region)
Each grape variety is harvested at phenolic maturity and vinified separately.
Following a 48-hour period of pre-fermentation skin contact, extraction takes place with gentle pump-overs in combination with punching down the cap and delestage (or ‘rack and return’). Alcoholic fermentation temperatures are closely controlled, starting at 22°C at the beginning of the fermentation process and rising to 26°C by the end. The Tannat grape variety undergoes a 25-day period of skin contact while the Cabernet Sauvignon skin contact lasts 20 days.
Once the free-run wine is drained off and the press wine put aside, malolactic fermentation is allowed to occur naturally at any time, depending on the particular tank, between the months of November and March.
When the malolactic fermentation has taken place, the wine is blended and left to mature for eleven months in French oak 225l barrels (30% new). During this period of barrel-maturation three rackings take place before the barrels are blended in tank for a period of four months in order to bring complete harmony to the cuvee.
