Domaine Lupé-Cholet Beaune Premier Cru Les Bressandes 2012

An elegant Burgundy/Pinot Noir from a premier cru plot in the village of Beaune. 2012 is considered a very good vintage with low yields and rich concentrated wines.
From a tiny 0.3194 ha (0.7857 acres) parcel located in the middle of "Les Bressandes" climate/vineyard in the northen part of the Beaune vineyard.
Grapes: 100% Pinot Noir.
Soil: Clay-rich lime soils on hard limestone.
Alcohol: 12.5 % VOL
Wine making: The grapes are picked manually and berries hand sorted. About 90% of the harvest is destemned so as to avoid excessive bitterness from the stalks. Fermentation with maceration then goes on for 15 to 20 days in conical vats with thermoregulation. This allows control of fermentation temperatures and has direct influence on aromas and colour extraction. Finally, gentle pressing occurs.
The wines are barrelled for 18 months, 30% new. Whilst the wine is maturing, it is regularly stirred up (bâtonné), putting the lees back into suspension, bringing more fatness and roundness. Racking takes place prior to bottling, with no fining, just light filtration, preserving the natural riches of the appellation.
Our Tasting notes: It has a very deep ruby-red colour. The nose is fresh and still young, it is delicately aromatic with red fruit and some spices including pepper. On the palate, it has plenty of roundness and energy with a fine tannic body and discreet new oak.

Serving suggestions: Red meat and also mild cheeses. Serve at 17°C.
(So no harm in popping it into the fridge for 30 minutes in summer to take the edge off any warmth)
